The first time I had ever heard about kale chips was over a year ago, when Trish shared photos on her Facebook. It was one of those “great ideas I’ll try some day” that I ended up neglecting over time.
That is, until yesterday.

Baked kale chip seasoned with paprika and curry powder
See, I have this serious addiction potato chips. It’s my Achilles’ heel when it comes to dieting, more than chocolate, more than cheese, more than pasta, more than anything. Giving this up and pining over it on weekdays has been HARD. I needed an alternative and I remembered Trish’s kale chips and how good they looked.
It turns out, the baked kale chip has been a big hit on the internet with food bloggers and dieters. Tastespotting definitely noticed and celebrated 40 contributions of kale chips recipes last fall.
Yet, the recipe is so ridiculously easy that even the most bumbling culinary novice could do it. I’ll share that recipe with you in a bit.

But could kale really replace the potato chip?
The answer is: YES!! It tastes really good! It doesn’t quite replace that starchy carb-loaded addictive quality of a potato chip but it does have that satisfying super-thin crispiness and crunchiness. I’m really enjoying that slightly bitter kale flavor mixed with the spices I added. The mixture of flavors really adds to the satiety.
The high fiber count also makes you full much faster. So, even though the chips were super-thin and airy, I got full on them really fast! The best part is that, with twice the serving size of potato chips, it’s only a third of the calories.

How to Make Kale Chips (about 6 servings)
Ingredients:
- 1 bunch of any type of kale
- extra virgin olive oil
- your favorite seasoning salt (most prefer sea salt)
- your favorite herbs, spices and seasoning
1.Preheat oven at 350 F
2. Dry out the kale in a salad spinner or with a clean kitchen cloth or paper towel.
3. Snip or tear off leafy parts into bite-sized pieces. Discard stem.
4. Drizzle with oil and toss until it’s well distributed. Add just a dash of salt.
** It’s really easy to make this too salty so use the salt sparingly. You can always add more afterward if it’s too bland.
*** Optional: Add your favorite herbs or spices. I made my second batch with paprika and curry powder and it was superb. I do have an unusual palate, though, so start with something you know you’ll like.
5. Bake for 10-15 minutes. Let cool, then enjoy!

I’m going to have to give this a try the next time I pick up some kale – the bf and I try to add kale to smoothies and stuff, but there’s always so much left over…kale chips would be a great way to use up leftovers!
