Wanja-Jun and Whole Wheat Oatmeal Blackberry Pancakes

Firstly, though, I was wondering if other Ebates members have received their February 15th payment on time. It’s already the 18th and this is the first time I have not been paid on time. I sent them an e-mail early yesterday but I’ve not heard back from them. I’ll be pissed if they make an ass out of me when I’ve referred so many people to their site.

On to more cheerful things:

Taking a daily 2000 iu dose of Vitamin D and soaking in 20 minutes out of the Philips goLite has made me into a much more productive and optimistic person. As a result, I have been cooking a lot more often. I’ll get into the details of the goLite and Vitamin D some other time.

A couple of past meanderings:

My very first casserole. I had no idea it was so easy to make.

Blackberry jello. This only counts as “cooking” because of the 6 hours involved in firming the gelatin, ha.

Today’s creations:

This morning, I was compelled to make whole wheat oatmeal pancakes with blackberries. Later this evening, I made wanja-jun (battered and fried ground beef and tofu cakes).

I had found a very simple recipe for whole wheat pancakes on cooks.com and I just added unflavored oatmeal, vanilla extract and thawed blackberries. My cousin had given me a huge batch of blackberries she had picked and frozen immediately afterward.


I recall the batter looking more like a grey color than this cool shade of purple.

I spread syrup and butter on mine and ate them rolled and sliced.

Wanja-Jun

For dinner, I made wanja-jun. This would be my second time making it, with yesterday being the first. It’s very easy. It’s tofu, ground beef, onions, green onion, garlic, sesame seed oil, salt and pepper. Everything is mashed, minced, diced etc… so that it can all be kneaded, separated and shaped like dough.

Then you dip them in flour and egg.

Fry, flip over, press down with turner, get splattered in the eye with a stray drop or two of hot oil even though you had an oil screen over the pan, break a wine glass, get the boyfriend to rush in and panic for your well-being, then let him clean up the broken glass, set all of it aside for them to cool for about 10 minutes before you serve…

    I’ve racked up about $26 on ebates but haven’t gotten anything yet. Hopefully I didn’t accidentally throw away the check thinking it was junk mail or something!

    Please do update us on your vitamin D/light therapy regimen! I recently got a SAD therapy lamp as well, and started taking vitamin D supplements a couple months ago. The light has been a huge help to me; I felt more energized the first couple days but still had the laziness/depressed feeling and junk food cravings until the third day of using the lamp. Perhaps it’s too early to definitely tell, but I’ll keep you updated on it.

    Also, what do you think of your lamp? I had the same one a long time ago but it made me too nauseous and gave me headaches (I think it had to due with the blue color). I’ve heard the blue light is actually more beneficial to some people over others, but the white light lamps seem to work better for me, personally.

    I’m totally going to make those pancakes the next time I have some whole wheat flour!
